Moroccan Inspired Hummus With Basil (Vegan)

moroccan dishes start with chickpeas and flavor, lots of flavor!

Hummus is one of those staples in our house, but if we want to make our own we tend to go big! Moroccan inspired hummus uses our own baharat blend, which we make from our spice rack.

Ingredients

  • 1 tin of chickpeas (drained and rinsed)
  • 1/2 cup tahini
  • juice and zest of a lemon
  • 2-3 cloves of garlic (you can go too far with fresh garlic but just adjust to your families taste)
  • 2 tablespoons sultanas and 3-4 dried apricots. (soak them for a few hours before and keep the liquid)
  • Baharat Mix (1 teaspoon ground Cumin, 1 teaspoon ground Cinnamon, 1 teaspoon ground Cloves, 1 tablespoon ground black pepper and 2 teaspoons of paprika) add a few twists of rock salt to this mix.
  • 6-8 fresh basil leaves
  • Olive Oil for drizzling

Method For Making Moroccan Hummus

  1. Chop the garlic and saute in some olive oil until softened.
  2. Then add to the food processor along with the tahini, chickpeas, lemon, spice mix and basil leaves. (hold back about 1/2 teaspoon of the mix for dusting over the top.
  3. Add a few tablespoons of the liquid leftover from soaking the dried fruits.
  4. Keep mixing until you have the consistency you want. Smooth but not dry.
  5. Add more of the liquid to give you the right texture to your hummus.
  6. Then add your sultanas and apricots. This will give a chunky texture to the fruit. We like that, you may not and prefer to add it at stage 2.
  7. Serve with breads, olive and salad. Drizzle a little olive oil on top – ideally the olive oil from softening the garlic. Then dust with the remaining mix.
