Allspice and cloves do have a lot in common with regard to flavor and how they are used. Both share an intense, pungent aroma and taste with allspice including tones of nutmeg, pepper, cinnamon and cloves. Cloves tend more towards a sweetness that is absent in allspice.

Cardamom offers a deep, minty, citrus like flavor which offers warmth and aromatic properties to a dish. Cinnamon is woody with a deep spice and citrus flavor, warm and sweet. Cardamom is the seed from within a pod that we use and cinnamon is the dried bark of an evergreen tree, as sticks or powder.

Saffron can be replaced with safflower or poor man’s saffron, however these are still hard to come by ingredients. A more suitable alternative may well be turmeric, used in moderation or a gentle paprika. For color using calendula petals can work very well as can using chorizo in certain dishes.
